EXAIR Super Air Knife Helps Bakery Protect Sheet Pan Coating

A bakery had a process where they cleaned baking sheets after they made cakes, breads, and donuts.  The system consisted of scraping the pans with brushes prior to running them through a washing system.   The excess crust material had to be removed as it could cause problems with the washing machine.  The baking sheets had a non-stick coating to help in the baking process.  The issue that they were having was that the brushes would start to remove the non-stick coating over time, causing the pans to rust.  If you needed more iron in your diet, this would not be the proper way.  The baking sheet was 18” (457mm) wide by 36” (914mm) long.  They contacted EXAIR to see if we had a better way to clean these sheets without damaging the coating. 

EXAIR has been supplying powerful non-contact ways to clean, dry, and cool products.  For this application, I recommend the model 110218SS Super Air Knife Kit.    The kit includes an 18” (457 mm) 303SS Super Air Knife, a filter, a regulator, and a shim set.  The stainless-steel construction would protect against the harsh detergents that are used in the process.  If additional protection is required, EXAIR also provides 316SS material.  The unique feature of the Super Air Knife is that it entrains ambient air at a rate of 40:1 to deliver a hard-hitting force with a small amount of compressed air.  In addition, the filter would capture any contamination from the compressed air line to keep the surface clean.  The regulator and shim set would be used to control the amount of force required to remove the debris. 

The Super Air Knife was placed just before the washing system to remove the baked contamination.  The brush system was removed.  As a bonus, they realized that they did not need to replace the brushes quarterly, which added replacement costs and maintenance time.  Sometimes these savings are overlooked.  The setup was really easy, as they only had to run compressed air to the Super Air Knife and mount anywhere from 3” (76mm) to 12” (305mm) from the sheet instead of having to periodically adjust the brushes due to the bristles shortening.

After the installation, they were amazed at the power of the Super Air Knife.  And with the non-contact cleaning, the non-stick surface was able to last much longer without having to replace the pans.  Currently, the baking sheets are lasting twice as long as they were before they started using our product.  If you have an application, where you would like to protect the surface, EXAIR has a variety of products that can create a non-contact way to clean, dry, and cool.  An Application Engineer can assist you. Doughnuts vs Donuts – Better Quality Thanks To A Super Air Knife

The two words, doughnut, and donut are synonymous with each other.  In research, the spelling donut is another Americanized word that didn’t catch on until the late 20th century. Either way, there are still multiple types of doughnuts. One of my favorites is shown below by one of the best donut manufacturers, NASCAR.

Maybe you are a little riskier and like some donuts that have a little less horsepower and a little more spice to them. Something like a ghost pepper doughnut that has a combination of spicy and sweet flavoring to satisfy your morning cravings for food. A regional bakery has opened up production and after months of determining their recipe and icing selection, they still needed some help on getting the glazing level correct on the finished doughnuts. The baked goodness would travel under a waterfall of glazing and several variables would lead to the amount of glazing that would build up/ remain on the doughnut. After testing these variables out the customer still wanted a better coating so they called EXAIR.

The solution, a 30″ 316 Stainless Steel Super Air Knife to mount over the conveyor and blow down the surplus glazing into the catch pan for recirculation.  The variability in force from a gentle breeze up to a forceful, glaze stripping blast, was exactly what the baker ordered.  This setup has been in practice for months now and nothing but positive results have been tasted, I mean seen.

EXAIR Atomizing Spray Nozzles for Coating, Cleaning, Cooling

A recent customer in the automation / tool making industry had a need to spray a mold release agent onto some specialized tooling. Originally, the customer had planned to use some sort of pressurized sprayer. After some initial tests to prove the concept, the customer found that the moving mechanical parts of the sprayer became fouled by the release agent. And cleaning the internal parts was not easy to do.

In their search for a more permanent solution, the customer came across EXAIR Atomizing Nozzles. After going through some application type questions to narrow the focus down to one model, we determined that the customer would be best served by model AF1010SS (Internal Mix, Flat Fan Pattern Atomizing Nozzle). The customer had a couple of questions about the nozzle in order test the product.

  1. Is it possible to disassemble the nozzle and clean it completely? The answer is yes, the Atomizing Nozzles can be completely disassembled to allow for cleaning, maintenance or replacement of worn parts.
  2. Are the nozzles solvent resistant? The answer is also yes; the Atomizing Nozzles are made of AISI303 type stainless steel and can be cleaned with any normal solvent based cleaner.

Earlier in this article, I mentioned that we went through some application type questions. Here is a list of general questions that we normally ask a customer about their application in order to determine which in our selection would be best suited.

  1. What is the volume of liquid flow (G/Hr) needed for the application?
  2. What is the viscosity (cP) of the liquid being applied?
  3. What are the required spray pattern, size and shape required?
  4. Is the liquid under pressure (by pump or pressure pot)? If so, what is the liquid pressure?
    1. Side note: we have options for non-pressurized liquid by using our siphon fed nozzles.

Benefits of Atomized Liquid Nozzles vs. Liquid Nozzles

There are a great many applications that require a spray (as opposed to a stream) of liquid. Certain droplet sizes, and flow rates, are beneficial for certain applications. For example, if you’re fighting a fire, you want as high of a flow rate as possible – the more water you douse the fire with, the quicker it goes out.  You also want a fairly large droplet size, since a mist would tend to evaporate instead of extinguishing the flames.

Pressure washers also benefit from higher (though not near as high as fire hose) flow rates, and droplet sizes.  You want an appreciable flow rate, because that means high velocity, and good sized droplets combine that velocity with their relative mass to “blast” away dirt and detritus from the surface.

Medicine delivery devices, like asthma inhalers, are designed to produce mid-sized droplets, but pretty low (and controlled) flows.  The droplets need to be small enough to efficiently spread the medicine through the breathing passages, but large enough to where they won’t evaporate before they ‘plant’ on the nasal & bronchial membranes to get absorbed.

These are examples of “liquid-only” nozzles…no other media or means of force are used to effect the spraying action.  Most of the time, the droplet sizes in these applications are measured in hundreds of microns, which “liquid-only” nozzles are ideally suited to generate.  Other applications, however, call for much smaller droplet sizes…such as those only attainable through atomization.

A typical “liquid-only” nozzle is capable of producing droplet sizes of 300-4,000 microns. Atomizing Nozzles’ droplet sizes are consistently under 100 microns, and can be as small as 20 microns!

Small droplet size is key to cost effectiveness in many applications:

  • Think about expensive coatings…the smaller the droplet size, the better and more even the coverage, and the less you have to spray (and pay) out.
  • Or humidification…smaller droplet size means more stays airborne, for longer, and in a larger space.
  • Petroleum based lubricants, by their nature, only require a thin layer for best results.  Smaller droplets make as even and thin of a layer as possible.
  • Dust control is much more effective with smaller droplet sizes, since the longer the mist lingers in the air, the more dust particles the individual droplets will adhere to…and then drop with them to the surface.  This also prevents getting the surface of the material any wetter than it has to be.
